I just got on this forum to solve a problem with my father's 00 EX, I probably won't be logging back on, but I ran across your post. I would create a table with a recordset for each routine, and columns for each day (e.g. the value for routine 1 Day 3 would be squat1. Then create tables for each exercise with the exercise in the resordset (eg: squat1) . Then place the particular information for the different squat routines in the column.

This would allow you to add and subtract exercises to a routine/day without much trouble (eg query on the day and routine and it will return all of the exercises for that routine regardless of number). Depending on what you want to do, you might also look at having the days as recordsets and the routines as columns.

You could also add information to exercises and create new exercises with little effort. If you have trouble with your basic select queries, go the the SQL view of the query and edit it to do what you want. Microsoft does some proprietary things to their SQL but most SQL structure should apply.
